Ann Romney Welsh Cakes Recipe
Ingredients
- 3 1/2 cups All-Purpose Flour
- 2 teaspoons Nutmeg
- 1 Granulated Sugar
- 1/2 Baking Powder
- 1 Salt
- 1 cup Butter
- 1 Egg
- 1 1/4 cups Black Currants
- 1/2 cup Milk
Directions
- Beat the egg alongside milk. Add currants to mixture. Sift all other dry ingredients together.
- Work butter into flour and mix until mealy. Pour milk and currants over flour and butter mixture. Mix well.
- Wrap in wax paper and chill for at least one hour.
- Roll it 3/8th of an inch thick and cut into pieces with cookie cutter
- Cook on a pancake griddle at 325 degrees, greased with oil.
- Cook on both sides, flipping when shiny.
- Roll in granulated sugar and let cool.
