Scrape down the bowl, and mix in the eggs one at a time. Stir in the vanilla and molasses.</li>

In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt. Add the dry ingredients into the wet ingredients, and mix until just combined.</li>
<li>
Scrape down the bowl again with a rubber spatula, and slowly mix in the rolled oats and pumpkin pie spice.</li>
<li>
Scoop out dough with a large cookie scoop and place on the parchment lined baking sheets about 2 inches apart.</li>
<li>
Bake for 10-12 minutes, until the edges are golden brown, its okay if the middles look slightly undercooked, they will finish cooking on the pan as they cool.</li>
<li>
Allow to set for4-5 minutes before transferring to a cooling rack. Once completely cooled, store in a large zip lock bag on the counter.</li>

Preheat oven to 350°, unwrap about 16 caramels, line a baking sheet with parchment paper.</li>

Using a large cookie scoop, scoop out a mound of dough, pull it apart, insert a caramel in the middle and press the dough back together into a slightly flattened ball. Place on a baking sheet, 2 inches apart, and repeat until all your dough is gone.</li>
<li>
Bake for 10-12 minutes, until the edges are golden brown, its okay if the middles look slightly undercooked, they will finish cooking on the pan as they cool.</li>
<li>
Allow to set for 5-7 minutes before transferring to a cooling rack. Once completely cooled, store in a large ziplock bag on the counter.</li>

<ul><li>Sometimes with these caramels, they harden back up once cooled, I like to throw mine into the microwave for 10-12 seconds to soften them up! Plus warm cookies bring out the apple spice so much better!</li></ul>

In the bowl of a stand mixer, fitted with the paddle attachment, cream together the butter ands sugars.</li>
<li>
Add in the egg and vanilla, mixing until smooth. Beat in the Nutella until creamy.</li>
<li>
Add the flour, cocoa powder, baking powder, and salt. Mix on low until just combined.</li>
<li>
Slowly mix in the toffee bits and chopped symphony bar until just distributed.</li>
<li>
Place in the fridge to chill for 30 minutes. Preheat oven to 350° Line a baking sheet with parchment paper</li>
<li>
Place the scoops on the baking sheet about 2-3” apart to leave room for spreading.</li>
<li>
Bake for 10-12 minutes, remove and rest for a few minutes before transferring them to a cooling rack. Enjoy!</li>

Preheat oven to 350°F and line a baking sheet with parchment paper.</li>

In a medium-sized bowl, toss together the cubed apple with ½ teaspoon cinnamon, ¼ teaspoon nutmeg, and the lemon juice. Set aside.</li>
<li>
In a blender or food processor, add 1 cup of the rolled oats, and pulse until it turns to a powder.</li>
<li>
Add the oat “powder”, the remaining oats, and the ground flax to a large bowl. Add in the apples and apple sauce, maple syrup, the beaten egg, and the vanilla. Stir everything together using a wooden spoon or rubber spatula.</li>
<li>
Using a large cookie scoop, place the dough about 1-2 inches apart. These won’t spread or flatten, so you need to slightly flatten the tops down with your fingers.</li>
<li>
In a small bowl, mix together the coconut sugar and cinnamon, and sprinkle the mixture over the top of the flattened dough.</li>
<li>
Pop in the oven for about 15 minutes. The cookies don’t get crispy, but they will firm up and hold shape.</li>
<li>
Store in the fridge in an airtight container or large zip lock bag. Pop in the microwave for 20-25 seconds before enjoying!</li>

In a small saucepan over medium-low heat, add the butter. Whisk frequently until you see brown bits start to appear, and the popping sounds slow down. Then remove from heat immediately, and transfer to a bowl to cool for about 15 minutes.</li>

In a large bowl, combine the flour, cinnamon, baking soda and powder, and salt. Whisk together.</li>
<li>
Once the browned butter is to room temperature, pour it into a stand mixer, being sure to scrape in all the brown bits!</li>
<li>
Add the sugars and mix until well combined.</li>
<li>
Mix in the egg and vanilla for 2-3 minutes until smooth.</li>
<li>
Add the dry ingredients and mix on low until just combined, being sure to scrape down the sides of the bowl as necessary.</li>
<li>
Fold in the butterscotch and cinnamon chips.</li>
<li>
Wrap the dough into a ball with plastic wrap and chill in the fridge for 1-24 hours. (If chilling for 24, be sure to remove it from the fridge 1 hour before you’re ready to bake them to soften up a bit.)</li>
<li>
Pre-heat oven to 350°F and place on a baking sheet lined with parchment paper, (I used a 1 1/2 tablespoon cookie scoop) about two inches apart.</li>
<li>
Bake for 10 minutes, remove and allow resting for 2-3 minutes before transferring to a cooling rack. Enjoy!</li>

<b>For the Cookie:</b>

<li>1 stick Unsalted Butter, Melted</li>
<li>1/2 cup Granulated Sugar</li>
<li>1/2 cup Brown Sugar</li>
<li>2 teaspoons Pure Vanilla Extract</li>
<li>1 Egg</li>
<li>1 1/2 cups All-Purpose Flour</li>
<li>1/2 teaspoon Baking Soda</li>
<li>1/4 teaspoon Salt</li>
<li>1/2 cup Chocolate</li>
<li>1/2 cup Blueberries</li>
</ul>
<b>For the Streusel:</b>
<ul class="ingredients">
<li>2 tablespoons Lemon Zest</li>
<li>1/2 cup Pecans</li>
<li>1/4 cup Brown Sugar, Plus 1 tablespoon</li>
<li>3/4 cup Rolled Oats</li>
<li>3 tablespoons Butter, Cold and Cubed</li>

In a large mixing bowl, using a wooden spoon, mix together the butter and both sugars until smooth and creamy.</li>
<li>
Beat in the vanilla and egg.</li>
<li>
Add the flour, baking soda, and salt. Mix until just incorporated.</li>
<li>
Carefully fold in the chocolate chips and blueberries.</li>
<li>
Spread evenly into an 8-10 inch skillet.</li>
<li>
Preheat oven to 350°F</li>
<li>
In a food processor, blend together the lemon zest, pecans, brown sugar, and rolled oats.</li>
<li>
Drop in cubed butter and pulse until crumbly.</li>
<li>
Pour on top of the dough in the skillet and spread to the edges, lightly pressing down so that it’s flat and not rolling around everywhere.</li>
<li>
Pop in the oven for 25-35 minutes.</li>
<li>
Remove from the oven, cool and enjoy! </li>

<h3>Notes</h3>

<ul>
<li>The streusel on top caused the cookie to take a little longer than other skillet cookies, but just start checking it every 2-3 minutes at the 18 minute mark.</li>
<li>It should be a little underdone in the middle, it'll continue to cook in the skillet.</li>
