It would finally seem that the warm weather is upon us, and I for one am ecstatic. I’m not really a cold weather gal, so with the warm sunny days of summer rolling in soon, I can’t wait! I’m all about sitting out on the deck, throwing a ball to the dog and of course, grilling!

Firing up the grill is the thing I look forward to the most about the warm weather. It’s already getting quite the workout. These fish tacos with tropical vanilla salsa have been in regular rotation at our house. Flaky halibut is seasoned, then grilled to perfection.

Then the tender halibut is placed inside soft taco shells, but the real star of the show is the tropical vanilla bean salsa. You guys, this salsa is perfection.

I was eating it off a spoon all by itself! Ripe mangos and sweet pineapple are tossed with avocado, red onions and spicy jalapeños. But the thing that takes this tropical salsa from good to amazing is Nielsen-Massey Madagascar Bourbon Pure Vanilla Bean Paste.

Fish Tacos with Tropical Vanilla Salsa Recipe

    4 Servings

Ingredients

For the Salsa:
  • 1 Mango, Peeled and cubed, large
  • 1 cup Diced Pineapple
  • 1 Avocado, Cubed
  • 1/4 cup Chopped Red Onion
  • 2 tablespoons Jalapeño, Chopped
  • 2 tablespoons Minced Fresh Cilantro
  • 2 teaspoons Olive Oil
  • 1 teaspoon Lemon Juice
  • 3 teaspoons Lime Juice
  • 1 teaspoon Nielsen-Massey Madagascar Bourbon Pure Vanilla Bean Paste
For the Fish:
  • 1 pound Halibut Steaks, 3/4 inch thick
  • 1 teaspoon Olive Oil
  • Salt and Pepper, To taste
  • 8 Flour Tortillas, Warmed, 6 inch

Directions

  1. In a medium bowl, gently toss together all the salsa ingredients. Set aside.
  2. Heat grill to medium-high. Brush halibut with olive oil. Brush grates of grill with additional olive oil.
  3. Grill halibut steaks for 3-5 minutes per side until halibut flakes easily with a fork.
  4. Remove halibut from grill, cut into portions and divide evenly between four flour tortillas.
  5. Top with tropical vanilla bean salsa and serve.
