School is back in session. That means easy dinners the whole family is going to eat and love are what is on order. So how about making a restaurant favorite at home? The Café Rio pork recipe is a highly sought after recipe. They hold it under tight lip, but I have come up with something that tastes pretty darn close!

Plus it takes all day in the slow cooker, so you can spend 5 minutes in the morning getting it ready, and dinner is done when you get home from work and school. You really can’t get much easier than that!

I absolutely love using the slow cooker to make dinner. Especially when it takes all day, and I don’t have to worry about it. I just come home to an amazing smelling house and put the final touches together and dinner is ready.

This Café Rio pork recipe is sweet, and tangy and just perfect as a base for burritos, tacos, salads or even just a sandwich. Top it with the Café Rio dressing recipe I shared last month, and you have an entire restaurant meal at home. No take out, no running around town, just sit down to dinner in your own house.

I know a lot of families are busy and end up eating in shifts. This Café Rio pork recipe is perfect for that. You can shred it, and leave the slow cooker on low, so people can come and go and dinner will still be hot and ready for them. Plus the leftovers are amazing!!!

I brought some of this Café Rio pork into my husband’s work one day to have lunch with him. Two of his co-worker went crazy, and I came home with nothing. Or take your leftovers and make oven baked taquitos with the pork. Freeze them, and you have another quick and easy dinner later in the week.

Café Rio Pork Recipe

    10 Servings

Ingredients

For the Marinade:
  • 3 pounds Boneless Pork Loin
  • 12 ounces Coca Cola
  • 1/4 cup Brown Sugar
For the Seasoning:
  • 12 ounces Coca Cola
  • 1 teaspoon Garlic Salt
  • 1 teaspoon Onion Salt
  • 1 teaspoon Chili Powder
  • 1 teaspoon Ground Cumin
For the Sauce:
  • 12 ounces Coca Cola
  • 3/4 cup Brown Sugar
  • 1/2 teaspoon Chili Powder
  • 1/2 teaspoon Ground Cumin
  • 1 4 ounce can Diced Green Chiles
  • 1 10 ounce can Red Enchilada Sauce

Directions

  1. Mix together Coca Cola and brown sugar for the marinade. Place in a large sealable plastic bag. Add pork loin, and massage to coat. Place in the fridge for 8 hours, to overnight.
  2. Remove pork from marinade and place in slow cooker. Sprinkle pork evenly with garlic salt, onion salt, chili powder and cumin. Pour Coca Cola over pork. Cover and cook on low for 7-9 hours.
  3. After the pork is tender, remove from slow cooker and use two forks to shred.
  4. Pour out the liquid in the slow cooker.
  5. Add pork back to slow cooker. In a blender or food processor combine all of the ingredients for the sauce. Pour over pork, stirring to coat.
  6. Cook for an additional 20-30 minutes until heated through.
