There’s a few key points to being a successful food blogger that I have learned throughout my career:

1. Make things that involve quinoa.

2. Make above mentioned quinoa into some sort of burrito, or Texy-Mexy dish.

3. Add cheese. On everything.

4. A dishwasher that actually works will make life a whole lot easier.

Okay, they may all seem a little dis-jointed, but I am just telling you about the inner working of my brain. It generally doesn’t make a whole lot of sense up in there.

Just keepin’ it realz yo’.

Now, you’re looking at this recipe and thinking “wow, for a girl that claims to have learned a lot, she sure ain’t practicing what she preaches. I mean, cream cheese? Come on Taylor, that stuff is barely passable as actual cheese.”

I’m going to continue to keep it realz here, and have a little confession time: I really just needed to get my dishwasher-hatred off my chest. I needed to talk to someone about it. I needed support.

I googled “dishwasher-hatred” support groups…..and got nada. So, my peeps, you’re my sounding/complainy board for today. Sorry.

Except I’m not.

As you may have picked up by the 220 words about a broken dishwasher above, my dishwasher is in fact broken. Which means I have to wash my dishes BY HAND. Like my GRANDMA used to do.

It’s a travesty.

Of course, amidst all the dishwasher induced drama, it happened.

That moment that happens in every girl with a broken dishwasher’s life where she has to decide between being lazy OR giving into her cheesecake craving. I wanted the cheesecake… but I didn’t want any extra things to wash. WHAT TO DO????

I sat. I thought. I ate an apple because I think eating makes my brain work better.

WAIT. AHA. AN APPLE.

An edible bowl.

So, it became one with cheesecake. And then I added some buttery oatmeal crumble topping because you just can’t bake an apple without a crumbly topping sidekick am I right? Yes.

You know what would be even more right?

If my dishwasher worked. Not that I’m bitter.

Until then though… Edible, cheesecake filled bowls for all!

Cheesecake Stuffed Baked Apples Recipe

    4 Servings

Ingredients

For the Cheesecake Filling:
  • 1/4 cup Low Fat Cream Cheese, Not fat-free, softened
  • 2 tablespoons Plain Greek Non Fat Yogurt
  • 2 tablespoons Granulated Sugar, Plus 2 teaspoons
  • 2 teaspoons Egg White
  • 1/4 teaspoon Pure Vanilla Extract
For the Oatmeal Crumble:
  • 1/4 cup Old Fashioned Oats
  • 1 tablespoon Brown Sugar, Packed
  • dash Cinnamon
  • 1 tablespoon Butter, Melted
  • Pure Maple Syrup, For drizzling
For the Apples:
  • 2 large Apples
  • 4 teaspoons Brown Sugar
  • dash Cinnamon

Directions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper. Set aside.

For the Cheesecake Filling:

  1. In a large bowl, beat together the cream cheese, yogurt and granulated sugar until smooth.
  2. Add in the egg whites, and vanilla and beat until well mixed. Set aside.

For the Oatmeal Crumble:

  1. In a small bowl, toss together the rolled oatmeal, 1 tablespoon of brown sugar and pinch of cinnamon.
  2. Stir in the melted butter and mix until crumbly and evenly coated.

For the Apples:

  1. Cut each apple in half and use a small knife to cut a large hole in the center of each half, being careful to not go all the way through the bottom of the apple! Rub 1 teaspoon of brown sugar in each apple half and sprinkle with a pinch of cinnamon.
  2. Place the apples onto the prepared baking sheet and divide the cheesecake filling evenly between each half, filling to the top.
  3. Divide the crumble topping evenly between each apple, pressing lightly so that it covers each half.
  4. Bake for 30 minutes, or until the filling just feels set.
  5. Remove the apples from the oven, and turn it to HIGH broil. Drizzle some maple syrup over all the apples and broil for an additional 2-3 minutes.
  6. DEVOUR.

Notes

  • Depending on how big your apples are, you may have a little bit extra filling.
