Easy mango salsa that's got the perfect amount of spicy too. Put it on tacos, enchiladas, burritos, and yes - even pita chips!

I've always been hesitant to add fruit to savory recipes. I’m never quite sure how to pair them. The fact that the husband can’t handle mixing sweet with savory also doesn't help with my inspiration. Nevertheless, I somehow seem to be drawn to it on restaurant menus and I’m rarely disappointed. I recently had some restaurant mango salsa and it was no exception. Surprisingly, I had it at a ski lodge bar.

We've been taking advantage of our crazy northeast winter by taking more weekend ski trips than we imagined. The goal was to get little V, my son, comfortable skiing some easy runs before heading to our Colorado ski trip. After the second visit to the mountain, I decided I had had enough of their bad pizza and refused to eat it.

While it's tempting to have pizza and fries everyday, it undoes everything I did at the gym prior to the vacation. I know, vacations are about having fun, but I can’t help getting annoyed with vegetarian food choices at the ski lodge or poolside. Don't get me wrong, I definitely give myself room to indulge. After all, it is a vacation and should be enjoyed, right? I believe the right way to do it though is to always indulge in the good stuff, not the crappy tasting pizza.

Luckily, I found another veggie option at the ski lodge bar. Quesadillas with mango salsa! Ok, so really cheesy quesadillas are not that healthy, but they were so refreshingly good with the mango salsa. Add a few veggies, like roasted broccoli, to the filling, serve it with a side of vegetable barley soup and this would make a great meal at home.

Mangoes are an Indian staple fruit. I don't think I’ve ever met another Indian who doesn't love a mango all on its own. Myself? Well, I think they are just okay. (I've probably offended every Indian by saying that.) I've made mango desserts in the past, but I'm in love with this mango salsa. I think I'd prefer a bowl of this salsa over plain mangos. I like the subtle savory flavor of the onions, jalapeños and cilantro. It cuts the sweetness just perfectly.

I made it at home with vegetable quesadillas. It’s also works well with tortilla chips as an alternative to pico de gallo. I think I will definitely be seeing more of this salsa with my Mexican dinners especially since mango season will be kicking in soon.

Easy Mango Salsa Recipe

  8 Servings

Ingredients

  • 1 1/2 cups Mango, diced
  • 3 tablespoons Red Onion, diced
  • 3 tablespoons Red Bell Pepper, diced
  • 2 tablespoons Jalapeño, deseeded and minced
  • 1 tablespoon Fresh Lime Juice
  • pinch of Salt
  • 1 tablespoon Fresh Cilantro, chopped

Directions

  1. Cut the ingredients as directed.
  2. Combine the mango, red onion, bell pepper, and jalapeño in a large bowl. Mix well.
  3. Add the salt, pour the lime juice and toss to combine.
  4. Finally add the chopped cilantro and mix well.

Notes

  • It is best to use a mango that is ripe but still firm.
