This knife features a 5-inch Japanese hollow-edged blade made of hand-forged high-carbon steel with a stain-resistant alloy, attached to a weighted bolster and a comfortable traditional-style handle.

Due to the blade’s size and shape, the Wusthof Santoku Knife is perfect for three of the most common kitchen knife tasks: slicing, dicing, and mincing. The handle fits comfortably in your hand, and a thinner blade prevents the knife from becoming overly heavy or unwieldy. Don’t let the lighter weight of this knife fool you, though: the sharp blade makes quick work of everything from onions to potatoes, and even easily cuts through tomatoes – a task that usually requires a serrated knife.

While the 5-inch blade is perfect for breaking down most vegetables, the smaller blade does prevent this knife from being useful for bigger jobs, such as halving melons or squash.
