Easy BBQ Chicken Pizza is way better than delivery. Make it tonight!

One of my favorite activities on a weekend is making homemade pizza.  Not only does homemade pizza taste so much better than take-out, but you have so much flexibility and creativity with what ingredients you use.  As long as you’ve got a good Pizza Dough Recipe (or store-bought dough), then the sky is the limit with the flavors and combinations for your homemade pizza masterpiece! 

I recently had the opportunity to try several products from Stubb’s Bar-B-Q, and as soon as I tasted the delicious Original Bar-B-Q Sauce, I knew exactly what I wanted to make… Barbecue Chicken Pizza!  I was born in Texas, so I am well aware of Stubb’s tasty sauces, marinades, and rubs

It had been many years since I’d last tried Stubb’s sauces, and I must say that I was really impressed with the flavors.  In fact, Stubb’s makes a number of different sauces in addition to the classic Original flavor.  If barbecue sauce combinations like Hickory Bourbon, Honey Pecan, and Smokey Mesquite don’t make your taste buds water, then I recommend a visit to the doctor!

For this Barbecue Chicken Pizza, you’ll need to cook the chicken ahead of time.  I decided this was the perfect opportunity to try Stubb’s Green Chile Marinade, so I covered a chicken breast in this marinade and went about my daily chores.  By the time late afternoon rolled around, I fired up the grill and threw the chicken on. 

About 10 minutes later, I was looking at a delicious piece of chicken, and it was all I could do to save it for the pizza!  (Ok, I may have snuck a piece or two when I was chopping it up…can you blame me?)  I am a true believer in this Green Chile Marinade, and I suspect I will be trying Stubb’s other marinades in the not-so-distant future!

Once your dough is prepared and chicken cooked, this pizza comes together very quickly.  Just lay down a generous amount of Stubb’s Bar-B-Q Sauce (I opted for the Original this time), and cover the pizza with a blend of shredded cheeses and chicken.  But there are a couple of secrets that take this recipe over the top.  (I’ll share these secrets with you…but you have to promise to keep them between us!) 

Secrets to Making the Perfect BBQ Chicken Pizza

  • Use a blend of cheeses.  Mozzarella is a requirement because of the way it melts, but I like to throw in some shredded Cheddar and smoked Gouda, too.  Trust me on this one! 
  • Mix a small amount of Stubb’s spice rub with olive oil.  Then brush this mixture all around the outer edge of the crust.  This will give your pizza crust an amazing texture and taste!  I dare anyone to leave the crusts on their plate after using this trick!  (Even though this is a chicken pizza, I used the Beef Spice Rub for the crust, and it worked beautifully.)
  • Once the pizza comes out of the oven, top it with a small handful of freshly chopped cilantro.  The brightness from the fresh herbs really balances the deep, delicious flavors of the barbecue sauce!
  • And last, but not least: Use a squirt bottle to drizzle a little bit of barbecue sauce back and forth across the top of the pizza once it is done and ready to serve.  In addition to boosting the flavor of the pizza, this extra sauce provides a nice visual appeal for your finished meal!

In total, I used 3 different Stubb’s products when making the pizza, and this Barbecue Chicken Pizza could be one of my absolute favorite pizza creations to date!  As I mentioned above, the beauty of making homemade pizza is the ability to be creative, so pick up some different varieties of Stubb’s sauces, marinades, and rubs and get to experimenting!

BBQ Chicken Pizza Recipe

    4 Servings

Ingredients

  • 8 ounces Chicken Breast, boneless and skinless
  • 1 No-Knead Pizza Dough, or store-bought pizza dough
  • 2/3 cup Stubb's Green Chile Marinade
  • 1 tablespoon Olive Oil
  • 1/3 teaspoon Stubb's Beef Bar-B-Q Spice Rub
  • 1/2 cup Stubb's Original Bar-B-Q Sauce
  • 2/3 cup Mozzarella Cheese, shredded
  • 1/3 cup Smoked Gouda, shredded
  • 1/3 cup Cheddar Cheese, shredded
  • 1/2 medium Red Onion, cut into rings
  • Fresh Cilantro, for garnishing

Directions

  1. Place the chicken breast in a small container and cover with the Green Chile Marinade.  Flip the chicken several times to ensure it is well-coated.  Cover and place in refrigerator for 4-6 hours.
  2. Preheat a grill to medium heat.  Place the chicken breast on the grill, and cook until done (about 10 minutes).  Dice the chicken into cubes about ¾”-1” in size.  Set aside.
  3. Preheat oven to 460°F.  (Tip: Pizza stones are an invaluable tool for homemade pizza.  They absorb the heat of the oven, giving you the perfect cooking surface.)
  4. Prepare the pizza dough by stretching it into a large circle.  (I prefer to place a piece of parchment paper under my dough as it makes it easier to get the pizza into and out of the oven.)
  5. In a small dish, combine the olive oil and Beef Spice Rub.  Mix well.  Brush the mixture around the outer 1” of dough.
  6. Spread ½ cup of Stubb’s Original Bar-B-Q Sauce evenly over the center of the dough.
  7. In a medium bowl, combine the Mozzarella, smoked Gouda, and Cheddar cheeses.  Gently toss until mixed.  Spread the cheese mixture evenly across the top of the barbecue sauce.
  8. Spread the grilled chicken cubes and sliced onions across the top of the pizza.
  9. Bake in a 460°F degree oven for 12-14 minutes, or until edges of the pizza turn golden in color.
  10. Remove pizza from oven and top with fresh cilantro.
  11. Using a squirt bottle (or sandwich bag with one tiny corner snipped off), drizzle the remaining 2 Tbsp of Stubb’s Original Bar-B-Q Sauce across the top of the pizza.)
